Chocolate Chip Quinoa Cookies

I’ve been making these cookies since my investment days and it’s the recipe I use to convert the
non-converted into the world of goodness! Everyone LOVES these cookies – especially kids and
those who claim to not like healthy or gluten-free eats! They are so scrumptious and have a
moist, chocolate chip banana bread-like consistency. Try ‘em, you’ll totally fall in love!

Ingredients
4 large, very ripe bananas
1 heaping Tbs almond butter (optional)
1 tsp (5 mL) vanilla
1/2 cup (125 mL) coconut sugar
1 cup (250 mL) quinoa (cooked)
1 cup (250 mL) uncooked quinoa flakes (or 100% rolled oats)
1 cup (250 mL) unsweetened, shredded coconut
pinch sea salt
1/2 cup (125 mL) dark chocolate chips (or nuts, or raisins or other dried fruit)

Method
Preheat oven to 375°F (190°C). In a large mixing bowl, mash bananas with a fork and add
vanilla, almond butter and coconut sugar. Add quinoa, quinoa flakes or oats, coconut, and
pinch of salt. Mix until well combined. Stir in chocolate chips and/or raisins.
Line a baking sheet with parchment paper and drop batter onto sheet. Bake for 25 to 30
minutes. Remove from oven and let cool.
Serves 24 cookies

Kale and Mango Smoothie Recipe

Kale & Mango Smoothie:

Kale and Mango Smoothie

Ingredients
 1 cup coconut water
 1 bunch raw kale (roughly 1 cup packed)
 1 cup frozen mango
 Optional: 1 scoop collagen protein (vital proteins) or protein + greens (vega)

Method
Add all ingredients to a high-speed blender and blend until smooth. Pour into a glass
and enjoy!

Berry and Nut Smoothie Recipe

Berry Nutty Smoothie:

Berry Nut Smoothie

Ingredients
 2 cup almond milk
 ½ cup frozen blueberries
 ½ cup frozen strawberries
 ¼ banana
 1 tbsp raw almond butter
 1 tsp chia seeds
 1 scoop collagen protein (either vital proteins or bulletproof)

Method
Add all ingredients to a high-speed blender and blend until smooth. Serve immediately.
